A registered dietitian and director of nutrition education for the New York Beef Industry Council, Behlke emphasizes the importance of eating a sound diet to support good health and optimum athletic performance. Her expertise will give area runners the chance to be educated on health and wellness when training for the Boilermaker. As a staff dietitian at the New York State Beef Industry Council, Behlke is responsible for developing, recommending, and implementing nutrition information programs and youth education programs. Her main goal is to promote the idea of a healthy lifestyle, while stressing the importance of beef in an athlete’s diet. Behlke earned a bachelor’s degree in dietetics from the University of Nebraska at Lincoln and completed post-graduate work in clinical dietetics at Yale Medical Center. She has spoken at conferences across the Northeast to encourage healthy eating habits among consumers.
